Making Manicotti

You can start with pre-made shells and simply stuff them with fresh cheeses but they never taste as good, or have the same smooth texture, as home made manicotti shells.  When I make my manicotti, I start from scratch.  It does take a bit of time and on your first attempt it may be a little difficult but once you get the hang of it, Making Home Made Manicotti is easier than you think.
